Happy 3rd Birthday Sweet Chase!!



We celebrated Chase's third birthday at Glenlake Park in Decatur, Georgia on Sunday May 22nd. It was a beautiful day, 90 degrees, but breezy and beautiful...because it was Chase's birthday of course. ha  Actually, it was perfect. The kids (and Chase especially) had a great time on the playground and soccer field. And this...is all that matters. My wonderful girlfriends also drove out from east bumble with their children which was a wonderful surprise - thanks ladies!!Chase was a bit hesitant at first about the whole party and hid under one of the tables for about 10 minutes, but once he saw all the Spiderman stuff and some friends come, he was ready to play.  This, by the way, is his second Spiderman birthday party...at only the ripe age of THREE!!

Chase was overly spoiled this year- of course. He had a special trip with Gam Gam to the Build A Bear store and picked out his very own Atlanta Braves Bear. Gam Gam put a special recording in it for him and he loves it.  You can tell since he pushes the voice button at least 100 times a day!
It is really sweet. However, sometimes hearing it at 3 am, not so sweet. Ha Ha

Papa Scott and Papa Andy got Chase a special surprise as well.  His very first BIKE!
Toy Story 3- his favorite.  He was very excited and hopped in the bike as soon as he saw it.  Thanks Dads.!

Happy Birthday my little Sweet Pea! Boy are you a handful, but you sure are sweet and you are so much fun. Thank you for all the hugs, the kisses and I love you's...they get me through every single day.

THE RECIPE:
For those of you that wanted my Asian Chicken Salad recipe from the bday party, here it is:

Ingredients:

1 carrot, peeled- shave into bowl or get pre-cut carrot strips
3 cups shredded napa cabbage
3 cups shredded romaine
1 small red pepper, seeded and thinly sliced
2 Tbs fresh mint chopped
2 cups Rotisserie (or leftover) chicken - about 2 small breasts - shredded
1/2 cup slivered almonds
1/2 chow mien noodles for garnish

Dressing:
1/2 cup peanut oil
2 Tbs low sodium soy sauce
2 Tbs rice vinegar
1/4 packet Stevia (sugar substitute) or 1/2 tsp granulated sugar
Fresh ground pepper and Salt to taste

* make sure to taste this dressing first, you may need to add more oil or sugar to your own liking.
